Amazing - and fun too :) Gotta piece of American cheese?

Got my copy of One mag from Penzeys on Saturday. There was a blurb for a simple recipe called Ancho Cheese Puffs....said they couldn't believe it either. so of course we had to try :)

We had no powdered ancho chili, so we used just regular chili seasoning.

Heat your oven or toaster oven to 400 degrees. Take a slice of regular American cheese. Cut it into 9 squares. Put it on a piece of parchment paper, then on the cookie sheet. Sprinkle chili powder (or Ancho if you have it) all over. Put it in the oven and bake for 7 minutes.....take a look when it's at about 5 minutes :)

The tiny squares "puff up" after 5 minutes and the end product tastes exactly like Goldfish crackers! I actually brought several slices to the office today with some chili powder and showed everyone using the toaster oven. Everyone was amazed and will do it with their kids or grand-kids :)

I guess it's just like making croissants or good pie dough - milk solids with the 'cheese' (vege oil solids) and it puffs up.
