I would love some information on potatoes and what the various varieties are better for? For example which potatoes is your best for mashed potatoes, a russet or Yukon gold or ? And baking and twice baked and so forth. I would love to see a discussion of potatoes and recipes. We enjoy red potatoes here but is there any particular recipe that works best with them?
