blue cheese/roquefort?

Vancouver, WA(Zone 8a)

My dil fixed this great dip/spread w/ blue cheese. It was very good but I am wondering if there is "blue cheese and then blue cheese"? This was soo biting, almost too much. bitter. I know I have had one of them that is a bit smoother. Is there a brand/type of blue cheese or roquefort that is particularly good ?
