Do red beets freeze well?

Jacksonville, FL(Zone 9a)

I found a huge bunch of red beets (14) on sale yesterday. The greens were wilted so I got them for just $1.00.
I am about to go out of town and didn't want to leave them in the fridge so I roasted all of them this morning and made pickled beets with some of them but there are still waaaay too many left.
Do you think I could freeze them? Should I leave the skins on or slip them while I can still do it easily?
Or, should I just pickle all of them and can them???? Any ideas?????
