Here is an upsidedown turkey you can roast in 4-5 hrs, if you need the turkey in a hurry!
ROAST TURKEY WITH PAN GRAVY
Serves: 14
preparation about 45 minutes
One 14-pound fresh or frozen (thawed) turkey 1 1/2 teaspoons salt 1/2 teaspoon black pepper
1 stick of real butter
Preheat oven to 325 degrees F. Remove giblets and neck. Keep to add to gravy. Wash turkey with cold running water and drain well. Take stick of butter and rub entire turkey with it. Fasten neck skin to back with 1 or 2 skewers. Rub turkey all over with salt and pepper. Place turkey,face down , on rack in large roasting pan, covering with extra large aluminum foil first with the openening edges at the top of the pan. When roasting,the juices travel to the top so it isn't dry. Close aluminum foil, insert thermometer through foil. Put it through underside of leg. Be sure doesn't touch bone. Roast turkey about 3 3/4 hours; start checking for doneness during last hour of roasting.
It'll be strange see the underside of the turkey a golden brown.
While turkey is roasting, prepare giblets and neck to use in Pan Gravy,
or if you don't want to go through the trouble, use Franco American Turkey Gravy.
To brown turkey, remove foil an roast 1 hour more. Baste occasionallywith pan drippings,tearing foil around thermometer. Turkey is done when temp reads 180 degrees to 185 degreees. REmove turkey and keeep warm by covering with foil before serving.
