Skinny Dip anyone ?

Here's a really simple and good dip. Break out the veggies and enjoy with zip guilt! We also use it instead of butter on good rolls or as a mayo substitute on sandwiches. Super high in fiber and super low in fat :)

1 can of white cannellini beans, drained (I use Progresso brand)
Saute some or alot :) of garlic in olive or canola oil til just tender
Lemon juice - I use the juice of a whole, large lemon
Salt and Fresh ground pepper

Put all the above in a blender, including the oil from sauteeing the garlic - hey, a little bit of fat is a good thing :)

We dip veggies of every kind - the stuff is gooooooooood :) If you refrigerate it before using, make sure you bring to room temp before using.
