Olives En Croute

2 cups (8 ounces) grated sharp cheddar cheese
1-1/4 cups flour
1 stick melted butter
About 40 pimiento-stuffed olives, well drained.
Work the cheese, flour and butter together to form smooth dough. Mold about 1 tsp of dough around each olive.
Shape into balls. At this point, you can freeze on a cookie sheet & then transfer to plastic bag for indefinite storage in the freezer..Great to have on hand. When ready to use, place on baking sheet and cook 450 degrees for 15-20 minutes or golden brown. If not using frozen, chill 1 hour before baking.
Made these today for the 1st time in awhile.. I had forgotten how good the are..
