would you like to share your creme brulee recipe?

here's my easy version.

8 egg yolks
1 can condensed milk (14 oz)
1 can evaporated milk (12 oz)
zest of 1 key lime

equipment:

bowl
fork
microplane/grater
ramekins
roasting pan or deep baking pan

wisk together condensed milk and egg yolks, then evaporated milk and zest of 1 lime. preheat oven 325F. transfer mixture to ramekins. place ramekins in a roasting pan and fill pan with enough water to come halfway up the sides of the ramekins. bake for 30-40 mins.

chill.

before serving, sprinkle 1 tablespoon of sugar on top of each chilled custard. hold a kitchen torch 2 inches above surface to brown the sugar and form a crust. garnish with cookies and fresh fruit. Serve at once.

makes 15 small (2 oz) creme brulee, or 6 (4.25 oz).
