southern apple cake

a co-worker gave me this recipe. haven't tried it yet but plan to.

4 cups chopped apples
2 cups sugar
2 tsps cinnamon
3 cups flour
2 tsps baking soda
1 tsp salt
2 tsps vanilla
2 eggs
1 cup oil

pour sugar and cinnamon over apples. let stand 1/2 hour. add oil, eggs and vanilla and mix well. add flour, baking soda, salt. mix thoroughly. bake at 350 deg. for 1 hour in greased tube or bundt pan.


sounds simple enough - note --don't know what kind of applies are used.
