2 (8 0z) pkgs cream cheese
1 cup sugar
1 teaspoon vanilla extract
2 eggs
12 vanilla wafers
1 can pie filling
Preheat oven to 350 - Yields 12 tarts - Bake time 20 minutes
Place a paper cupcake liner in cups of a muffin pan. Beat cream cheese until fluffy. Add sugar and vanilla, beating well. Add eggs, 1 at a time, beating well between each. Lay a vanilla wafer, flat side down, in each cup. Spoon mixture over wafer. Bake for 20 minutes. Allow tarts to cool; the top should sink and make a well for your choice of topping.
