As the house at the moment is filling up with the great smell of roasting chicken hot wings, thought I'd post the recipe. If you like Hot Wings like I do, but hate the waste & calories of frying, you'll like this.
Preheat oven to 500 degrees. For easy clean-up, line bottom half of broiler pan with foil. Separate chicken wings at joints, saving tips for freezing for stock if you wish. Place wings on broiler pan top half.
Sprinkle your choice of all or some of the following in any amounts you wish: granulated garlic/garlic powder, chili powder, oregano, cayenne pepper, dried red pepper flakes, cumin, etc. (I use EVERYTHING - lol!!!).
Place pan on rack in upper third of oven, & immediately turn down temp to 450. Roast for 15 minutes, then turn temp down again to 425 & continue roasting for another 15 minutes. Remove pan from oven, turn wings over & again sprinkle with your choice of above spices. Return to oven & roast for another 15 minutes, then raise oven temp back up to 450 & roast for a final 15 minutes. Remove from oven.
In a small saucepan melt 1/3 cup of unsalted butter & add 1/3 to 1/2 cup of Frank's Louisiana Hot Sauce or your favorite wing-type hot sauce. When combined & hot, remove wings from broiler pan to a large bowl, pour sauce over, & gently toss.
Serve with blue cheese dressing for dipping & celery sticks if desired.
PLEASE NOTE: Oven temps do vary, so during the last 15 minutes of cooking especially you may need to adjust the timing or temp.
These always come out just as crispy & delicious as the deep-fried ones I get at dedicated Hot Wing restaurants around here.
