I love your echinops or globe thistle. I have plants-pink or red crimon lilys, iris, purple coneflower plants or orange canna lilys 5-6' or seeds larkspur,bird of paradise (orange,red variety)or red poppies that come back everyyear. Does any of that sound good to you?
