A "Special" Sweet Potato Recipe

With the holidays coming up, I thought I would share my Grandma's recipe. It's quite different from other sweet potato recipes I have seen. I am a transplanted Yankee here in the south and this is way different than what is considered traditional sweet potatos here :-) !!

There are really no measurements....but I will explain as best as I can.

sweet potatos boiled in their skins until fork tender, sliced lengthwise about 1/4-1/2" thick (remove skin)
butter cut into 1/4" pats
brown sugar
granny smith apples, peeled and sliced about 1/4" thick

In a casserole dish put a layer of sweet potatos, then a layer of sliced apples, a couple pats of butter and a "good" sprinkle of brown sugar. Repeat all layers until dish is full (it will shrink down while cooking) ending up with the brown sugar layer.
Bake at 350 until apples are tender and top is lightly browned. Approx cooking time....45 minutes ??

I can taste them now.......yum!
