I was thinking about knives after following the thread on J.A. Henckles knives. For quite some time I've been thinking of upgrading my knives. I'm planning on getting an in-drawer knife block and buying knives separately. I think right now I have a 4" Henckles paring knife, a 4" Chicago Cuttlery paring knife (I love this one, even though the blade isn't as sturdy, because it fits so nicely in my hand), a 10" Henckles serrated bread knife, and a 7" Henckles knife-that-looks-like-the-paring-knife-but-bigger (don't know what it's really called...). My husband loves that one because he has bigger hands, and therefore likes the bigger knifes.
So what I want to know is: what are your must-have knives, the ones you use all the time that you couldn't live without? What do you think I need to add to my collection? Since I'm going to buy them separately, I want to get good ones that will be useful to me.
