Does or has anyone here teach/taught them?

As I mentioned on another thread, I've been asked if I'd be interested in teaching some cooking classes for our local Adult Education program.

While I've enjoyed cooking many different ethnic cuisines for years, & have even done some minor catering for friends, I've never taught cooking before. And while I think it would be interesting, fun, & possibly even somewhat profitable, I have visions of looking like some bizarre episode of "I Love Lucy".

Any ideas/tips?
