I have some carrots in the garden that got way too big and I'd like to shred them for carrot cake. I've frozen carrots before and blanched but they were to be cooked later. Since I use raw carrots for my carrot cake I was wondering if I should blanch them before I freeze them or just shred them and but in bags in the amount needed for a cake. If anyone has any experience with this I'd appreciate any help or comments.
