Chile Rellenos Anyone?

I grew Poblano peppers this year with the intention of making Chile Rellenos which my husband loves. The peppers are ready but I'm not...no recipe! The one's he's familiar with are stuffed with Chihuahua cheese. I understand there's versions with meat added also. Would really appreciate some recipes for any and all versions.
