I don't really have a borscht recipe. I just throw in whatever I have, and then add dill weed and cream at the end.
I have a big pot of it brewing now, since I had a little of this and a little of that from the garden today. Carrying the bowl back to the house, I could just see borscht, so I stopped at the herb garden and picked some dill weed and basil.
I had some leftover roast beef from yesterday, so I used that for the meat. From the garden I had carrots, beets, potatoes, green beans, zucchini, cabbage, and onions. I used last years canned tomatoes because I'm not getting many fresh ones yet, and we are eating them fresh as fast as they ripen.
For seasoning I used bay leaves, salt, pepper, garlic powder, and beef boullion cubes.
After it simmers for awhile, I'll add the dill weed and some cream.
I've made borscht like this for years, without a real recipe. I'd like to see everyone's recipes, or hear how you make it. Maybe I can improve my borscht making skills, because we do love it with all the garden veggies.
