If you are like me, I am constantly searching for ways to use the abundance of Summer squash. A good friend gave me a recipe for Squash Fritters, and I tried them tonight. They are very tasty. Here is the recipe.
2 cups chopped squash
2 TBL chopped onion
salt, pepper and 1 tsp sugar
2 eggs
6 Tbls flour (self rising)
2 tsp melted butter.
Mix all ingredients together, then drop by spoonfuls onto a hot griddle or skillet. Cook until brown on both sides, then enjoy.
