Preheat oven to 350
Prepare 3 9" cake pans
3 cups flour
1 teas. baking soda
1 teas. salt
1 1/2 cups sugar
1 teas. cinnamon
3 eggs, beaten
3/4 cup vegetable oil
1 1/2 teas. vanilla
1 8oz. can crushed pineapple
1 cup chopped pecans
2 cups chopped bananas
Combine flour, soad, salt, sugar and cinnamon in a large bowl. Add eggs & oil, stirring until dry ingredients are moistened. Do not beat.
Stir in vanilla, pineapple, pecans & bananas. Pour batter into prepared pans, bake for 30 minutes.
Cream Cheese Frosting
8 oz cream cheese
1/2 cup butter
16 oz, powered sugar; sifted
1 teas. vanilla
Blend and whip. Frost only a completly cooled cake, top with pecans
