Fuchsia

It never occured to me until today that some people didn't know fuchsias are edible, both the berries and the flowers are edible although the flowers are a little sharp and make a wonderful decoration for an iced cake.

7 ounces of sugar
1.5lbs Fuchsia berries
1 Fl ounce Pectin
Juice of half a lemon

Heat the water and dissolve the sugar in it, when cool add the berries and the lemon juice. Bring to boil while stirring constanly and strain the liquid (fuchsias have a lot of seeds) and add the pectin to the strained liquid. Continue to boil until it thickens. Pour into heated glass jam jars and seal with a round of greeseproof paper and a tight fitting lid.
