It will soon be time for the dreaded zucchini arriving on the doorstep!!!!! Thought I'd start a thread with favourite zucchini recipes. This one is lovely, and very tasty.
ZUCCHINI LEMON LOAF
Combine:
4 cups flour
1 tablespoon baking powder
1½ cups sugar
1½ teaspoons baking powder
1 teaspoon salt
1 package of lemon instant pudding
Mix and add to dry ingredients:
4 eggs
1 cup oil
1 1/4 cups milk
1 teaspoon lemon extract
juice of 1 lemon
grated rind of 1 lemon
Add 2 cups unpeeled grated zucchini.
Makes 2 loaves or 1 Bundt cake. Bake at 325 for 1 hour 15 minutes. Watch so it doesn't dry too much during cooking
