A Variety of Tomato Juice Recipes

Here are a few Tomato Juice Recipes for you. I have listed Basic Canned Tomato Juice directions below. Additional spices/peppers etc. may be added according to your taste.

Basic CANNED TOMATO JUICE

1/2 bushel tomatoes, cook & strain
1 lg. onion
1 bundle celery tops

Cook until tender and put through sieve or food mill. Combine with tomato juice in large kettle. Add:

1 c. sugar
1/5 c. salt
Juice of 3 lemons

Cook for 10 minutes. Put in hot jars, seal and cook 10 minutes more in water bath cooker.


V-4 TOMATO JUICE COCKTAIL

18 lbs. ripe tomatoes (7 qts. juice)
1/4 c. chopped onion
2 c. chopped celery
1 c. chopped carrots
1/2 c. sugar
4 tbsp. picking salt
1 tbsp. celery seeds

Skin tomatoes. Cut tomatoes into kettle. As it boils, add other vegetables, salt, sugar and spices. Simmer uncovered 20 minutes. Put through sieve or food mill. Return juice to pot and boil. Pour into 7 hot quart jars. Process pressure cooker 5 minutes at 5 lbs. or boiling water bath for 35 minutes.


SEASONED TOMATO JUICE

Cook 20 minutes:
3 large onions
3 cloves garlic
8 quarts of tomatoes, quartered
Cook twenty minutes --

Put through blender, small amount at a time. Put through a strainer to get the seeds out, etc.

Mix juice with:
2 tbsp. salt
3/4 tsp. pepper
2 tsp. horseradish
1/3 c. lemon juice
1 tsp. Worcestershire sauce
Reheat juice just to boil and process for 10 minutes
