In Search of Ice Tray "ambrosia" recipe

My grandmother used to make an awesome dessert that was frozen in the old metal ice trays (w/out the dividers). I know it had fresh cherries, nuts, cream cheese, pineapple and maybe coconut. I'm sure it had other stuff, but I don't know what. She used to spread it in the ice tray and freeze it and I used to eat it frozen (although I think it was meant to be eaten slightly thawed).

Does anyone know what this recipe is or have something similar?
