This yummy light summer dessert was on our staff room table the other day. It disappeared very quickly! ;)
Peaches and Cream
Fluffy and creamy. The cream cheese in the topping gives a distinctive flavor.
CRUST
Butter ............................................................... 1/2 cup......... 125 mL
Graham Cracker Crumbs................................2 cups.......... 500 mL
Brown sugar packed......................................1/2 cup...........75 mL
FILLING
Canned sliced peaches, drained,
juice reserved..................................................2 x 14 oz........2 x 398 mL
Reserved juice, plus water to make................2 cups............500 mL
Granulated sugar..............................................1/4 cup............60 mL
Cornstarch.........................................................1/4 cup............60 mL
Cream cheese, softened..................................8 oz.................250 g
Granulated sugar...............................................1 cup...............250 mL
Whipping cream................................................2 cups.............500 mL
(or 2 envelopes topping)
CRUST: Melt butter in saucepan. Stir in graham crumbs and brown sugar. Reserve 1/2 cup (125 mL) and press remaining crumbs in ungreased 9 x 13 (22 x 33 cm) pan.
FILLING: Combine peaches, juice with water, sugar and cornstarch in saucepan. Heat and stir until misture boils and thickens. Cool.
Beat cream cheese with sugar until light and fluffy. Whip cream until stiff. Fold into cheese mixture. Spread 1/2 on prepared crust. Spoon thickened peaches on top. Spoon second 1/2 cheese mixture over as best you can. Sprinkle with reserved crumbs. Cuts into 15 pieces.
