Simple ingredient quick-meals

I've taken on a really busy lifestyle, and it's starting to catch up with me nutritionally. I'm finding myself having pasta, rice, or microwave chicken fingers too many evenings. If I make an effort to plan & cook, I'll make one big meal, then eat leftovers for nearly a week. Living alone complicates things, as it's hard to cook for one. To better explain my schedule, here's an average day...
Up 5:20
Walk dog
Feed dog & cats
Shower & ready for work
Breakfast
Clean up after pets, walk dog again
Out to work by 6:30am
Work 700 (or so) until 4:00pm (30 minutes for lunch, unless go out with co-workers)
4:00pm travel to horse-stable
Tack up, ride, un-tack, cool off horse
Depart for home 645-7:00pm
Home by 7:45 (usually, it's between 7:15 & 7:30)
*DINNER* for all - me, dog, cats
Clean up after pets
Walk dog 2-3 times in evening
Shower if weather is very hot & feeling yuck from horse-ride
Aim: Bed by 9:45-10:00 to get optimum sleep to start next day

How on earth do I find time to eat nutritous without fast-food? Weight is by no means an issue - horse-back riding affords me the exercise beyond what any gym would provide. Chewie-the-Thoroughbred works me hard, and to compliment him, I'm thankful for the workout. I'm all-muscle, and in better physical shape than I've ever been. Problem is, my "exercise" limits my evening time, and with no one to cook for me, I'm stuck boiling noodles, or eating instant rice (or worst, cold cereal). I'm always hungry during the work day, and as of recently, I'm resorting to the snack machine at work by 9:30 or 10:00am, searching for granola bars or cookies.

So, is anyone else in a similar situation? I know eating instant food isn't the best solution, but lately, I don't know what else to do but mass-purchase of TV dinners. :) Please, if you can, offer suggestions that don't involve seafood - I just don't enjoy the taste or the fragrance (if that's what you wanna call it - -- I call it 'stinkie'!).
