Generally don't do vegetables because of shortened growing season (about 90 days), altitude (7500'), animals (deer, chipmunks, gophers, ground squirrels, and rabbits), and limited water (well). Just completed a deer and rabbit proof garden. Have a 6 year old horseradish growing in 2 stacked ceramic chimney flue pipes- that comes to a 12x12x24" high column. Kept it enclosed in a chicken wire gage because the deer eat the leaves. In moving it to the new enclosure found one tap root more than 24" long. A 1x12" piece broke off so what else, that night made horse radish. It was tough and tasteless with almost no aroma. Can anyone tell me why that might be?
Horseradish
Not sure but it sounds like it's probably too old. Horse radish should be dug each fall, the larger roots ground and the smaller roots replanted for next year's crop
