Saw this in the Sunday paper and we are having it for dinner tonight. (but halved!)
1 pound fresh tender green beans If very long, cut into shorter lengths.
1 lb. fusilli or rotini or pasta of your preferance
1/4 lb. lean bacon, diced
! TBSP Olive Oil
2 Shallots minced
2 Tomatoes, peeled and diced
1 C.whipping cream (I didn't say it was diet pasta w/ beans and bacon)
Salt and pepper to taste
1/2 c. freshly grated Parmesan or Asiago cheese
Bring a big pot of water to a boil, toss in the beans, cook 4 to 7 mins until beans are tender
scoop them out and transfer them to an ice bath, and then drain.
Cook your pasta in the same water, to al dente, drain and rinse
While pasta cooks, cook bacon until crisp, place on paper towel, and break up when cool.
Drain bacon fat from pan, add olive oil, stir in shallots and tomatoes, cook about one minute,
Stir in whipping cream and beans, mixing well, and then add the pasta. Sprinkle with cheese and dress the top with the bacon bits just before serving.
