How to Rescue Summer Squash?

Decatur, GA(Zone 7a)

My dh grows the veggies here and always grow crooked neck squash. The problem is that he waits days between harvesting, and he usually comes in with squash that have tough skins (really rinds at this point). While I was at work, he made a squash casserole that was delicious except for the tough squash! Is there any way to salvage these squash? Can we cook them like winter squash? Or, is there a recipe where we can somehow get the insides out and discard the huge seeds? Any help would be appreciated.
