I just came across this old and favorite recipe! I got it in the 1980's from Sandy Mush Herb Farm near Asheville, NC and have made it many, many times. I don't make it for myself though because it just makes too much. I thought I had posted it 3-4 years ago but do not find it.
Garbanzo, Rice & Green Bean Salad
serves 10-12
Cook 2 cups (raw) long-grain brown rice
Cook 1 cup (raw) garbanzo beans, or use 1 can heated, drained, and rinsed
While warm, add:
2 cups steamed green beans, bite-size (Do NOT overcook!)
1/2 cup finely chopped celery
1/2 cup chopped chives (may substitute mild onions)
In 1/2 cup of olive oil, sauté:
1 clove minced garlic
1 Tbs. fresh (or 1 tsp. dry) basil
1 tsp. dry tarragon
Add:
juice of 1 lemon (and zest, if you like)
1 tsp. dry ground mustard
1/3 cup cider vinegar
Mix together and add to rice mixture. Black olives may be added for color. Serve with lettuce, tomatoes, a good crusty bread and sprinkle all with parsley. Serve warm, or chill. Good either way!
Great side dish for a picnic/potluck
