Fried Green Tomatoes

Woodville, TX(Zone 8a)

This is the best fried green tomatoes recipe I have ever eaten and so easy too. I got it from the Luby's Cafeteria 50th Anniversary Collection Cook Book. It makes enough for 8 servings but I always cut it in half.

Fried Green Tomatoes

2 cups all purpose flour
One and one-half cups of water
1 Tablespoon seasoned salt
6 medium green tomatoes sliced into quarter inch slices ( I choose tomatoes that just have a hint of pink on one side since this is right before they begin to ripen)
2 and one-half cups fine saltine cracker crumbs ( I used the Premium reduced fat and didn't process them real fine but left some larger crumbs)
Vegetable oil

1. In a shallow bowl, whisk together flour, water, and seasoned salt until smooth. Place crumbs in separate shallow bowl. Dip tomatoes into flour mixture, then into crumbs, coating evenly. (The batter will be thick and you will have to work to get it to stick especially if the tomatoes are too wet so I pat with a paper towel before dipping)
2. In large skillet, heat about an eighth inch oil until hot. Add tomatoes and cook about 2 minutes on each side or until golden brown turning only once.

Eat ASAP since they are best right out of the skillet. This is the last thing I cook when making a meal.
