Thought I would start a new thread on muffins. I have just finished putting a batch of our favourite muffins in the oven, and thought I would share with you. I love making muffins, and would appreciate Dave's members sharing their favourites.

Low Fat Bran Muffins
2 cups whole wheat flour
3 cups bran
1 cup dry skim milk powder
3 teaspoons baking powder
1 teaspoon baking soda
1½ teaspoons salt
2 cups of water
4 eggs
1/4 cup oil
1/2 cup molasses
3/4 cup honey
dates or raisins
Mix dry ingredients. Add the remaining ingredients. Stir just to blend. (I find it is good to dissolve the milk powder in the water, and then you don't end up with white flecks in your muffins, if the milkd doesn't totally dissolve.) Bake at 350 for 15-20 minutes, and do not overcook.
By the way, this doubles very well.
