Desperately searching for a Corn Muffin recipe

Hi Everyone,
Ok, I absolutely LOVE corn muffins and my problem is I don't know how to make them...properly, from scratch, not from a box. I grew up making them from the box and enjoyed them very much, but now that I live in Scotland, they do not have corn bread mixes over here...so I'm desperate for a recipe 'from scratch' and my dad used to call it.

The recipes you have all shared are simply AMAZING and I'll be cooking for ages without having to hear 'that again??' in a whiney tone LOL There's so many I can't wait to try it's just difficult to work out which one to cook first :D Thanks!
