It's summer time, salad time, here in the Mid-South. Please help me out by posting your favorite, simple salad recipe. This posting on another thread is what prompted this request.

Now that you've made me so hungry I would like to share one of my favorites, not making it this weekend because no fresh asparagus
Angel hair with creamy asparagus sauce:
2 T extra virgin olive oil
3/4 c finely chopped onion
1 minced clove garlic
4 1/2 oz thinly sliced prosciutto
1lb fresh asparagus trimmed and cut into about 2 inch pieces
1 c chicken broth
16 oz angel hair pasta
1 c fresh grated parmesan
1t black pepper
1/2 t salt
heat oil in skillet over med heat. add onion and garlic; cook 2 or 3 min till tender. add prosciutto sautee 1 min. stir in asparagus and broth bring to simmering and cook until asparagus is tender.
cook pasta according to pkg directions. drain and return to pot
add half and half and parmesan to sauce, stir until blended. pour sauce over pasta and toss.
serve
