CREAM OF RICOTTA WITH GRAND MARNIER AND FRESH STRAWBERRIES

Cream of Ricotta with Grand Marnier and Fresh Strawberries

10 ounces fresh ricotta

¾ cup sugar

2/3 cup heavy cream

2 eggs

3 tablespoons Grand Marnier

1 pint fresh strawberries, sliced or cut in half

Separate the yolks from the egg whites. In a bowl, mix the ricotta, sugar, heavy cream, Grand Marnier and egg yolks until you obtain a smooth cream. (It's easier if you use a food processor or mixer with the paddle attachment.) Beat the egg whites to medium peaks and carefully fold them into the creamy mixture. Store in the refrigerator for at least 1 hour before topping with the fresh strawberries when ready to serve. Serves 4
