Looking for a Tasty Chicken Soup recipe (not creamy)

I have tried for years to make a flavorful chicken soup like "mom" use to make. Have splugred $10-$12 for "soup" chickens from the butcher which don't seem to be any more flavorful then the ones in the meat counter at my local grocery store.

Does anyone have a really good recipe to share? My mom's standard receipe was boiling a chicken, adding some carrots, celery & salt. She served the noodles and chicken on the side so we could have just the broth/vegetables if we wanted.
