a nice party dip

Rutland , MA(Zone 5b)

you can use either clams, mushrooms or a combination of both for this dip

2 15 oz. cans of minced clams and/or sliced mushrooms (drain one can)
2 tbls lemon juice, fresh or bottled
1 arge onion cut into 1/4 inch dice
1/2 stick of butter
1 cup breadcrumbs
1 cup shredded chedar cheese, either mild or sharp

in a pot add the two cans of minced clams and/or mushrooms (only one with liquid in it)
add the lemon juice. bring to a boil over medium heat then reduce to simmer and cook a few minutes more. remove from heat and set aside.
in another pot, heat butter until it melts over medium heat and add onions and cook until soft. do not brown.

add the clams/mushrooms into the pot with the onions and mix until well combined. add the breadcrumbs and mix well.

put one half of the mixture into an oven proof baking dish that has a cover, a glass cover is best.
top with 1/2 cup of the cheese. add the rest of the onion mixture on top of the cheese and top again with the rest of the cheese.

put in a 325 deg. oven until the cheese is bubbly.

i have been making this dip for twenty years and its great.
