I have a bunch of epis growing together in a pot. All the sudden, one puts out a llooooonnnnggggg tall stem and then growths from the stem. What is it doing?

Ah, my Epi oxypetalum does that. I read somewhere, in a thread that they do that to start new plants (naturally I can't find the thread now, perhaps the person who wrote it will pop in!). I presume the long stem eventually gets heavy and bends over....and another Epi roots where it lands?

Looking at the new growth - those long shoots - they will develop roots! ( when needed more so).
I haven't seen Epi oxypetalum grow in nature, but I have observed Epiphyllum phyllanthus in Guyana growing on roofs of houses and in a tree. As the plant grows, it will hold on/grow along with those rooted shoots and then forms pads/leaves on this new growth since a good foothold is established.
They are Epiphytes.
