i've posted these before but they are so good i thought i'd do it again.
both are simple, both are not for people on diets.
chicken and onions
six skinless,boneless chicken breast, quartered.
flour for dredging
one very large onion cut into a 1/4 inch dice
1/2 stick butter
oil for frying
coat chicken breasts in flour and cook in a large fry pan over medium high heat until lightly browned. remove from pan and set aside.
in same fry pan, add the onion and butter and cook until onions are soft.
preheat oven to 325.
place chicken in a single layer into a baking dish large enough to hold them. pour the onion mixture over them and bake until chicken and onions are a golden brown, about 40 minutes
chicken with marsalla wine and heavy cream
6 boneless, skinless chicken breast, quartered
flour for dredging
1/2 cup marsalla wine
1 cup heavy cream
6 thin pieces of prosciutto (italian ham), or regular boiled ham will do
coat chicken breast with flour and cook in large fry pan over medium high heat until lighty browned.
add one slice of ham to each breast and then mix the wine with the heavy cream and pour over the chicken.
cover the pan and cook for another 20 minutes or until chicken is cooked through.
