Here's a recipe for bran muffins for low carb or diabetic diets.
1 cup bran flake cereal/raisins
3/4 cup of milk
1/4 cup shortening (even better if you use saturated fat like coconut oil, it isn't fattening)
1 cup whole wheat flour
21/2 tsps baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg 1/4 cup of vinegar
Directions
Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups.
Combine raisin bran cereal and milk. Let stand until mixture is moistened. Beat in egg and shortening. Mix in flour, baking powder, spices and Splenda, stirring only until combined. Fill greased muffin pans 2/3 full.
Bake in preheated oven for 30 minutes, until toothpick or butter knife inserted into center of a muffin comes out clean.
