honest folks, i actually put this recipe together a long time ago while i was going through a few cook books.
4 to 6 bone in skin removed chicken breasts
cornstarch for dusting
one very large onion or two large onions cut into a 1/4 inch dice
1 28 oz can of crushed tomatoes
1 large can of small, pitted, black olive
8 ounces of mushrooms, fresh or canned
1 cup of your favorite red wine
1 or 2 cups cooked rice
oil for frying
coat chicken breast with the cornstarch
heat the oil in a large skillet over medium high heat
add the chicken and cook until golden on both sides. remove chicken from pan and place in a dish that with catch the juices.
in the same pan add the onions and cook for a few minutes then add the mushrooms. reduce the heat to medium low
then add the crushed tomatoes, the wine and the olives. cook for 10 minutes then add the chicken along with any juices from the dish. when you add the chicken make sure you "bury" it below the crushed tomatoes and onions.
cover the pan and continue cooking for another 45 minutes.
to serve, place some rice in the middle of the plate and add chicken breast then pour some of the sauce over the chicken.
