A quick and easy side dish for Summer...
1 can white beans (These are cannelllini, white kidney beans, but any white bean will do)
1-2 cloves garlic, minced
2 Tbs. fresh chopped parsley (I like the flat parsley for this dish)
2 Tbs. Extra-Virgin Olive oil
Drain beans and rinse well. Place in a bowl, add remaining ingredients and stir. Allow to marinate 30 minutes or more. May be served at room temperature, or chilled overnight. (Note, if refrigerated, let come back to room temp. so the oilve oil softens.)
