Scalloped Pineapple (for your Easter ham)

Payneville, KY(Zone 7a)

Scalloped Pineapple

2 cups sugar or splenda (you can use a little less if you'd like it less sweet)
1 cup butter or margarine
1 #2.5 can crushed pineapple with juice (about 2 cups)
3 eggs, beaten
7 or 8 slices fresh bread, finely torn (use whatever you have available)
2 tbsp milk

Preheat oven to 350. Cream together sugar and butter, add pineapple with juice. Fold in 3 beaten eggs and bread. Pour into sprayed 9 x 13 pan and sprinkle milk on top. Bake uncovered for one hour.

This is a tasty recipe (and I don't even like pineapple). This comes from my dear SIL, Newdeligal :)

Hope you like it,....it is similar to a bread pudding and a good accompaniment for ham.

Happy Easter all, :) Kathy
