Classic Irish Potato Cakes
These easy to make and delicious cakes are an essential part of any Irish "fry-up" -- the traditional breakfast of fried potato cakes, fried eggs, fried bacon, etc.

Ingredients:
1 lb. fresh potatoes, boiled.
1 oz. butter
1/2 lb. white flour
1/2 tsp baking powder
1 egg
1/2 small onion, chopped
1/2 sprig of parsley
Salt
Fresh-ground pepper
1 Tbsp. milk
It is very important to use fresh potatoes. Mash the potatoes and season to taste. Beat onions and parsley into mashed potatoes.
Rub butter into flour and baking powder. Add to vegetables and mix. Add salt and pepper to taste.
Beat egg and milk together in a bowl.
Add milk and egg to mixture and mix together thoroughly. Turn onto a lightly floured board and knead until smooth. Divide in two and roll each piece out into a circle about a quarter inch thick. Cut into two triangles or circles.
Fry in a pre-heated well greased pan until golden brown on both sides. Or if you prefer, bake in the oven at 350 degrees until they start to turn golden and rise slightly.
Cakes may be stored in the refrigerator and also freeze very well. For a more exotic taste, add some chopped cilantro and a little Tabasco® sauce and top with grated cheese.
