Caramelized Onion Chicken

I just have to share this wonderful Chicken dish I made this evening for supper. Its from Cooking Light and it's quick and easy to prepare and soooo tasty. Do give it a try!

Caramelized Onion Chicken

1 lb. chicken breast tenders
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1 tsp. olive oil
1/2 cup sliced onion
1/2 cup seedless raspberry jam
1 Tbsp. red wine vinegar
1 Tbsp. low-sodium soy sauce
1 tsp. bottled minced ginger
1/2 tsp. dried rosemary

1. Sprinkle chicken with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Add onion, and sauté two minutes. Add chicken to pan; sauté eight minutes or until chicken is done. Remove onion and chicken from pan.

2. Add jam and remaining ingredients to pan; cook two minutes, stirring constantly with a whisk. Return chicken mixture to pan; cook four minutes, stirring occasionally.

Makes 4 servings (serving size: 3 ounces chicken and 1 tablespoon sauce). Nutritional values per serving: 246 calories (10 percent from fat), 2.6g fat (0.5g sat, 1.2g mono and 0.4g poly), 26.6g protein, 28.5g carbohydrate, 0.5g fiber, 66mg cholesterol, 1.1mg iron, 521mg sodium and 19mg calcium.
