Recipe for Casserole and a Question

Hi All,

I am hosting a baby shower for my niece and plan on serving the following casserole. We've had this before, and it's very good and easy. Especially like the fact that I can make it the night before the event.

My problem is that I will need at least 4 x the recipe and I only have one oven. I am wondering if this could be made in a roaster. What do you think?

I'd also welcome any other suggestions for the main course.

Chicken Salad Casserole

Ingredients:
4 cups chicken (white meat) -- cooked and diced
4 whole hard boiled eggs -- diced
2 cups celery -- diced
1 can sliced water chestnuts
3/4 cup mayonnaise
3/4 cup cream of chicken soup -- undiluted
2 tablespoons lemon juice
1 tablespoon minced onion
2 tablespoons pimiento -- diced (optional)
salt and pepper -- to taste
TOPPING
1 1/2 cups crushed potato chips
1 1/2 cups grated cheddar cheese


Directions:
Mix first ten ingredients and put into a 2 quart baking dish (8x11). Refrigerate over night.

Remove from refrigerator 1 hour before baking.

Mix topping and sprinkle over top of casserole; Bake at 400 degrees for 20 to 25 minutes or Bake at 375 degrees if in glass dish.

NOTES : Original recipe said Mayo or Miracle Whip, but the consensus has been to use Mayo.
