I received 2 rosemary trees for Christmas. Are these safe to eat? Also 1 has dried up, can I use this as dried rosemary in recipes?

Oh yes.
You can use rosemary fresh or dried. For cooking, it goes well with "mediterranean veggies", lamb, chicken...etc. You can of course mix it with some other herbs, works well with thyme.
Once dried you can still use it for cooking and as medicinal tea with some honey (especially useful in th winter). You can even use the tea (without honey this time) as herbal hair rince after shampoo, especially if you have brown and/or oily hair.
Thanks so much, I hated to throw out the dried plant. Now I'll strip the leaves for dried rosemary. How do you get the seeds for rosemary? Is it a certain time of year?

rosemary roots super easy...take clippings of your rosemary tree that is still green and root it...Dip the ends of the clippings in a rooting hormone and place cuttings in a good potting mix, keep moist, very easy to do.

Thank you for the info. I did root some from the supermarket that way. I was just wondering if they seeded or not.

Speaking of Rosemary, mine is so huge that I can't even get my arms around it. I have had it for about 3 years now I guess and it was a small plant when it was given to me. But now it is at least waist high and I even got to see it bloom last year. Which was shocking to me because I never even knew it was supose to bloom! It had pretty purple flowers on it though.
I have never used it in cooking, although I do like going past it and brushing up against it just to get the smell.
I too have heard that it doesn't take as much of the fresh herb as it does for the dried herb. But I don't know how much to use of eaither one so I just haven't tried it yet.
Maybe I'll get up the nerve and maybe have a extra piece of yard bird and I'll give it a try someday.
MOLLYBEE I've always heard that you use 3 times the amount of fresh herbs as you do dried . Have been doing this for years. ADDITION: Mine is huge also. I don't have any idea what variety it is, (I planted it 4 years ago), but it is definetly hardy! It's gotten down in the low 20s and it survived. I used to cover it in cold weather but after forgetting a few times I quit. Our low 2 nights ago was 24 it's still doing fine and beleive it or not, its blooming
