Some of us have just been talking about Tea Party and recipes. Here's one I promised to put here.
Bread Pudding
(sorry it's in metric but it's easier to convert)
225g Stale Bread
Water
50g Margarine or cooking fat - melted
50g Sugar
half tea spoon of grated nutmeg
Pinch of mixed spice (if not available something you like or ginger)
75-100g Mixed dried fruit (your choice, soaked so they are plump)
1 egg
Milk (or water if preferred)
1. Tear bread into small pieces and place in a bowl, cover with cold water and leave for half an hour.
2. Remove bread from water and squeeze the water out of it.
3. Put the bread, all the dry ingredients and the cooking fat into a mixing bowl
4. Mix in just enough milk or water to make it into a sticky consistency
5. Grease a cake tin (18cm) and place mixture in
6. Preheat the oven 180C (350F or gas mark 4) and bake for 1 hour or until firm.
7. Sprinkle the top with sugar before serving.
This is meant to be a fairly moist but solid pudding and should serve 6 people. (Forgot to add) Can be eaten hot or cold
