Parmesan Vegetable Stir Fry recipe

I have been doing Curves for about a month now and doing their diet. This is one of the recipes in my book and oh, is it good. Thought I would share it here. Kathy

Parmesan Vegetable Stir Fry

1/2 onion, thinly slice (approx. 3/4 cup)
1 clove garlic, minced
1 tbsp olive oil
1/2 cup sliced mushrooms
1 cup fresh spinach (packed)
1 tbsp lemon juice
1/2 ounce (2 tbsp) shredded Parmesan cheese

Saute onion and garlic in olive oil until soft. Add mushrooms and cook until soft. Add spinach. Toss will and saute very briefly. Sprinkle with lemon juice and Parmesan cheese. Serve hot.

Makes 1 serving.

In addition, I broiled a 6 ounce skinless, boneless chicken breast which I had put lemon-pepper seasoning on and then cut up and put over the top of the salad.

Very, very tasty.
