I was buying these Chocolate Lava Cakes from Walmart that were sooo good! They are in the frozen food with the pies,etc. Brand is Sam's Choice. And then..I found this recipe in Prevention's Low Carb Holiday Recipes that I picked up on the magazine rack. These are just as good...and I'm sure..much lower in carbs!
Mini Chocolate Lava Cakes
4oz.semisweet chocolate chips
1/2 cup + 2 Tlbs. butter or margarine
3 eggs
3 egg yolks
1/2 cup confectioner's sugar
1/2 cup Splenda
1/3 cup all-purpose flour
Preheat oven to 450*. Coat 9 cups of 12 cup
muffin pan with cooking spray. Melt chocolate and
butter in saucepan over low heat, stirring frequently.
Cool slightly.
Beat eggs and egg yolks in large bowl with wire whisk
until well blended. Beat in sugar and Splenda. Beat in
chocolate mixture and flour. Divide evenly among muffin cups.
Bake 9-11 minutes until sides are set and cakes feel soft
when touched in the center. Run small knife around sides of cakes to loosen.
Immediately turn upside down onto serving plate. Makes 9
My own changes: I sprayed muffin cup papers with cooking spray.
I let them cool in the pan...then removed to wire rack.
I then froze them..just like the ones I had been buying.
When you are ready to use, you can remove just one ..remove paper...
and turn upside down on plate. Microwave it for 35 seconds. It will erupt
in the center...thus..your lava cake!
Great with low fat Cool Whip!!
